Big Tree Oyster Company is an oyster farm in Rockport, Texas, founded by husband-and-wife team Amy and Seth, both Rockport natives. Amy is a conservation biologist and Seth is a marine hydrographer and boatbuilder; they launched Texas' 7th oyster farm in 2022. The farm raises Eastern oysters in Copano Bay near Aransas National Wildlife Refuge and Goose Island State Park, using hands-on techniques that mimic natural tides, with no food, fertilizer, or chemicals.
