Flathead Lake Cheese is an artisanal cheese maker in Polson, Montana, operating a bright yellow creamery by the bay. They create cheeses by hand in small batches, using solar thermal heat to pasteurize locally collected milk when weather allows. The creamery building was begun in May 2009, built largely by the owners themselves.
