Cynthia's Gumbo Express Inc. was founded in September 2013 by Cynthia Boyd-Yette and Terry Yette, specializing in authentic, slow-cooked gumbo inspired by Louisiana cuisine. Based on Chicago's Southside, the business began selling gumbo at farmers markets and via a mobile food truck, and opened its first brick-and-mortar location at 9943 S. Halsted in Chicago.
