Founded in Fall 2022 by Rachael Floreani and Cassidy Petit, it exclusively licenses core technology developed at the University of Vermont and applies mechanical and materials engineering to design tunable biopolymer networks that enhance nutrition while preserving taste, texture, and functionality.
